The Etoiles d’Alsace has launched a revolutionary new training program, the L’Etoile d’Alsace Academy. This free 7-month program offers guaranteed employment at the end of the course. It is aimed at individuals far from employment, in professional retraining, or who have experienced a series of temporary jobs. The president of the Etoiles d’Alsace, Edouard Baumann, explains that the goal of this training is to provide an innovative professional training program that embodies the very DNA of the Etoiles d’Alsace, which is excellence.
Two possible tracks: in the dining room or in the kitchen
The L’Etoiles d’Alsace Academy offers two tracks for students: dining room training and kitchen training. The training begins at the Center for Apprentice Training (CFA) in Colmar with 4 weeks of refresher courses, during which students benefit from the teachings of two former starred chefs. They then undertake three internship periods in establishments that are members of the Etoiles d’Alsace. To ensure optimal and personalized progress for each student, a mentor accompanies them throughout their course.

At the end of these 7 and a half months of training at the L’Etoiles d’Alsace Academy, students are offered employment in the restaurant sector.
