In brief

Wurstsalat is an iconic cold salad from Alsace and Germany, made with sliced Alsatian meat sausage, sticks of Gruyère, gherkins and onions.

The Alsatian version stands out for its dressing made with Melfor vinegar, slightly sweet and flavoured with herbs.

The recipe is ready in 20 minutes, with no cooking of the main ingredients, and serves 4.

Serve well chilled, with country bread or pretzels.

A salad born in the brasseries of Alsace

Wurstsalat belongs to that category of popular dishes that need no introduction in Alsace. Rooted in peasant cooking and brasserie tradition, it was originally made with leftover Alsatian sausage, a thrifty household habit that has lost none of its relevance. Under the name Elsässer Wurstsalat, this cold salad has become a regional classic, on a par with flammekueche and choucroute.

Its popularity extends well beyond the region. Similar variations exist in Germany and German-speaking Switzerland, but the Alsatian version is recognisable by its Melfor vinegar dressing, an essential signature flavour that gives it its characteristic mild, aromatic acidity. Choosing the right Alsatian meat sausage remains the most important part of the recipe: its firm texture and pronounced flavour make all the difference compared with an ordinary sausage.

Ingredients for 4 people

For the salad:

  1. 400 g Alsatian meat sausage, cut into thin strips
  2. 200 g Gruyère from the block (never grated), cut into thin sticks
  3. 1 red onion, thinly sliced into rings
  4. 6 sweet-and-sour gherkins (Alelor type), cut into sticks
  5. A few green salad leaves
  6. 1 small bunch of fresh flat-leaf parsley, finely chopped

For the Alsatian dressing:

  1. 3 tbsp Melfor vinegar
  2. 4 tbsp sunflower oil
  3. 1 tsp mild mustard
  4. A dash of beef stock
  5. Fine salt, freshly ground black pepper

Making the dressing, step by step

  1. Soften the aromatics

In a small saucepan, gently sweat the onion and shallot in a drizzle of oil over a low heat for 2 to 3 minutes. The aim is to soften them without letting them colour.

  1. Add the liquids

Add the Melfor vinegar, the water and the beef stock. Bring gently to a simmer for 2 to 3 minutes to allow the flavours to blend.

  1. Emulsify the dressing

Off the heat, whisk in the mustard, then pour in the oil in a thin stream while continuing to whisk. The sauce will become slightly creamy. Season generously with pepper and adjust the salt, bearing in mind how salty the stock is.

This Alsatian dressing can be served hot, warm or cold, as you prefer. It also goes well with other regional salads.

Assembling and serving

Assembling the salad

In a large salad bowl, combine the strips of Alsatian meat sausage, the Gruyère sticks, the onion rings, the gherkins and the chopped parsley. Pour over the dressing and mix gently.

Cover and leave to rest in the fridge for at least 15 minutes. This resting time is essential: the sausage strips soak up the dressing, the gherkins release their acidity into the sauce, and all the flavours come together.

Serving

Arrange on a few salad leaves and garnish with a little fresh parsley. Serve with thick slices of country bread or Alsatian pretzels, ideally with a local lager.

Variations and practical tips

The Gruyère can be replaced with Emmental for a milder version. For extra crunch, a few slices of radish work well in the mix. The salad keeps for up to 24 hours in the fridge, well covered, which makes it an ideal dish to prepare in advance.

For the most authentic result, it is better to turn to an artisan Alsatian sausage maker rather than a supermarket. The quality of the Alsatian meat sausage directly determines the final balance of the salad: a sausage that is too fatty or too bland overwhelms the other flavours instead of complementing them.
